Easy low carb recipe for crab cakes

Super easy, rich, and flavorful yet not heavy, these low carb salmon cakes are so good! Loaded with mozzarella cheese and fried crispy in bacon grease, this is a salmon cake recipe that you will definitely want to save. Great for a Keto diet, each super low carb cake has less than 1 net gram of carbs!

Salmon cakes are one of the few ways I have historically been able to get my kids to eat salmon. While they are branching out a little as they mature, salmon cakes are still the most surefire bet. But I hate the normal binders that are usually used like crackers, bread crumbs or quick oats.

Fortunately, there are lots of good Keto-friendly alternatives for binders! Crushed pork rinds are usually my favorite, but for this recipe, I wanted something richer and higher in fat. I had some shredded whole milk mozzarella in the fridge, so I decided to give it a try. And I’m so glad I did! The mozzarella adds great flavor to the salmon without overpowering it.

One of the reasons this recipe is so low carb is because (almost) all of the ingredients come from animal products, which also makes it great if you are eating a Carnivore Diet. I’ve been experimenting with Carnivore recently, and this recipe has become a regular for me, along with my Cheesy Air Fryer Meatballs. Depending on how you are approaching Carnivore, you can use the recipe as is or you can omit the Worcestershire sauce, dill weed, and onion powder if you want to avoid all plant products. To each their own!

I used canned salmon in this recipe for its simplicity. And canned salmon has all the same nutrients as fresh or frozen fillets but at a much lower price point. Bonus nutrients if you buy wild-caught salmon with the skin and bones! If you’ve never had canned salmon with the bones, they are small and really soft – I promise you won’t notice them in your salmon cakes.

The collagen hydrolysate could be optional, though I highly recommend including more collagen in your diet in any way you can. Bone broth and eating meat cooked on the bone are great ways, also. I love including collagen in recipes like this, though, to increase my daily intake.

Also, the bacon grease for frying can be substituted with another stable cooking fat, such as lard or duck fat. The flavor from the bacon grease works really well with the salmon, though. And I almost always have bacon grease saved from making bacon. You do save your bacon grease, right?!

Better yet, fry up 3 or 4 slices fresh and fry your cakes in that. Then eat the bacon on the side. Great Keto Carnivore lunch!

Ingredients

  • 14 3/4 ounce canned salmon drained
  • 2 large pastured eggs
  • 4 tbsp collagen hydrolysate
  • 2 tsp dill weed, dried
  • 1 tsp Worcestershire sauce
  • 1 cup mozzarella cheese, shredded whole milk
  • 1/2 tsp pink sea salt
  • 1/2 tsp onion powder
  • 2 tbsp bacon grease

Instructions

  • In a medium mixing bowl, combine all ingredients except bacon grease. Mix well to combine.
  • Heat bacon grease in a large saute pan over medium-low heat.
  • Divide salmon mixture into four equal parts.
  • Shape each quarter into a patty and gently place in hot grease.
  • Fry for 3-4 minutes, or until the bottom side is golden brown and firm.
  • Gently flip the patties and fry on the other side for 3-4 minutes.
  • Let rest in bacon grease (the patties will absorb some of it!) for about 5 minutes before serving.

Notes

This recipe makes four servings.  We split it into four salmon cakes.
