Keto Italian Herb Beef Casserole
Italian garden herbs of basil, thyme, oregano, rosemary and marjoram give this flavorful casserole life. Ground beef, cauliflower rice and the herbs are combined with just enough colby-jack and parmesan cheeses to make a satisfying, tasty Keto meal the whole family will love!
Servings: 15 servings
- 3 pounds Ground beef grass-fed is best
- 4 tbsp Italian seasoning divided use
- 3 tsp pink sea salt divided use
- 2 12 ounce packages frozen riced cauliflower
- 5 tbsp pasture butter
- 12 ounces cheddar and monteray jack shredded cheese or other cheese blend that you prefer
- 20 ounces frozen pepper and onion blend
- 2 tbsp grated parmesan cheese
Preheat oven to 350 degrees.
In large skillet over medium heat, crumble the ground beef. Season with 2 tsp of the salt and 2 tbsp of the Italian seasoning mix. Saute until beef is browned. Set aside.
Grease a 10" by 14" pan with cooking spray or a little butter.
Place riced cauliflower in the prepared pan. Dot with butter and top with remaining 1 tsp salt and 2 tbsp Italian seasoning.
Layer browned ground beef over riced cauliflower. Top with cheddar/monteray jack cheese blend. Then the peppers and onions. The final layer is the parmesan cheese.
Bake uncovered for 30 minutes, or until the casserole is heated through. Enjoy!
I'm big on super easy Keto, so I took a little help on the prep time with my ingredients. Using frozen riced cauliflower and frozen peppers and onions saves a lot of time, and the nutritional value is similar to fresh.
If you want to rice fresh cauliflower, by all means, go for it! If you want to cut up fresh peppers and onions, that's great, too. I'd saute the onions with the ground beef before assembling the casserole, but the rest of the veggies can be layered in just like the recipe is written below.
We often have extra kids around our house, friends of our children, and they are mostly used to Standard American Diet fare. Our daughter had a friend staying with us last week. We knew from other visits that she only liked very home-style flavors. Stacey whipped up this dish from what we had around the house, and it was a huge hit with everyone. Give it a try. This is a good one to make ahead, also. Make a batch early in the week and take it for lunches all week long. Or freeze individual portions in freezer/microwave friendly containers like these that you can buy on Amazon. Then you'll have a meal ready to pop out of the freezer and into the microwave whenever you need it!
