Low Carb Bacon and Egg Breakfast Bars
A cheesy crust, creamy eggs and savory bacon combine for a great grab and go breakfast. Low carb and easy to make ahead, these baked egg bars will start your day off right!

  1. Prepare a 9” x 13” pan with cooking spray. You can also use butter to grease the pan, if you prefer. Preheat oven to 325 degrees.
  2. Microwave riced cauliflower according to package instructions. Combine 1 cup Colby Jack cheese, parmesan cheese, riced cauliflower, onion powder, garlic powder, salt and pepper in a mixing bowl.
  3. Using a spoon, press the mixture into the bottom of the prepared pan, making a crust.
  4. Whisk eggs and cream together in mixing bowl.
  5. Spread bacon evenly on top of crust.
  6. Top with with egg mixture. Sprinkle with reserved ½ cup of colby jack cheese and chives.
  7. Bake for 30-35 minutes, until eggs are set.
  8. Let cool and cut into bars or serve immediately.

This is the brand of prepared crumbled bacon that we use when we don’t have time to fry fresh bacon.
