My Favorite Keto Gravy Recipe
Beautiful, rich, thick Keto gravy, perfect for your Thanksgiving table (or any time you want!). This homemade brown gravy has the flavorful goodness of bone broth, the texture and taste you crave, and none of the carbs.
I have been on a mission to make really great low carb gravy for a long time. There are some foods that just scream holiday and tradition, and gravy is one of those.
Traditional brown gravy is made with pan drippings, butter, broth, and flour. The first three are all totally Keto, but the flour is definitely not. And the normal Keto-friendly substitutes fell short for me when I tried to use them in gravy.
Almond flour didn’t taste right (according to my family – I’m mildly allergic!) Coconut flour didn’t taste or feel right. Cream cheese would work for a white gravy (I’m totally experimenting with that recipe soon!) but I wanted brown gravy. Gelatin just didn’t thicken the sauce.
Enter xanthan gum. The only experience I had with xanthan gum (you can find it on Amazon) was as an additive in gluten-free bread recipes. It’s used to supply the structure that gluten provides and is hard to replicate. I thought if it could do that in bread, maybe it could work in sauce.
And it does! Not only does xanthan gum give a lovely, thick yet silky texture to my brown gravy, it’s also super fast and easy. And with less than 1 carb per ¼ cup serving, you can enjoy this low carb gravy without worry!
I have been including this awesome brown gravy in my personal Keto Carnivore (eating only meat) experiment.
Xathan gum is technically a plant product, so if you are being super strict about carnivore, this one is not for you. But many people practice carnivore while including some plant products like spices and coffee. This will definitely be on our Thanksgiving table (more of our favorite Keto Thanksgiving Recipes Here). But I have to admit, while I’ve been testing this recipe, I’ve gotten used to eating this gravy on meatballs, chicken, pork roast, and meatloaf, just to name a few. It’s great anytime, so don’t wait for the holidays to whip this recipe up!
Easy Low Carb Gravy Recipe
Keto Brown Gravy Recipe
Ingredients
- 2 cups pan drippings plus broth
- 1 tbsp pasture butter
- 1 tsp thyme, dried
- 1 tsp xanthum gum
- Salt and pepper
Instructions
- If roasting a turkey or other bird, when it’s done cooking, pour the drippings from the roasting pan into a glass measuring cup. Add broth to make a total of 2 cups. If you don’t have pan drippings, use 2 cups of broth.
- In a medium saucepan, melt butter.
- Add broth mixture and thyme.
- Turn heat on medium low.
- Sprinkle xanthan gum across the top of the liquid and whisk to incorporate. Continue to whisk until gum is all dissolved.
- Simmer mixture until it thickens.
- Add salt and pepper to taste.
