We love the combination of mint and chocolate in this keto pudding, but if you don’t like mint, you can leave it out and it’s still awesome.
This Keto Chocolate Pudding Recipe makes two servings, so you can have one and save the other for your next keto dessert time! The preparation takes less than five minutes. Pop it in the refrigerator overnight and it’s ready to go. No cooking, no fuss.
Note: We are personally Net Carb kind of Keto folks. This recipe has 9 Total Carbs, but 6 are from fiber, so the Net Carbs = 3. If you are a total carbs kind of Keto Dieter, this might not be for you.

Overnight Mint Chocolate Keto Pudding Recipe
Ingredients
- 1/2 13.5 ounce can full-fat coconut milk
- 1/2 cup water
- 2 tbsp chia seeds
- 1/2 tbsp Cacao Powder
- 1/4 tsp pepperment extract optional
- 1/4 tsp vanilla extract
- 1 dash pink sea salt
- 1-2 tbsp Swerve confectioner's sweetener powdered, to taste
Instructions
- When you open the can of coconut milk, the cream will likely be at the top. Stir to combine the cream and the water, then measure out half the contents. Save the other half for another recipe.
- Combine all ingredients, cover and refrigerate overnight or 6-8 hours. Second serving will keep in refrigerator for several days.
- Eat. Become a fat burning human!
